red potatoes – Red tend to have the best flavor but you can use russet potatoes as well.
Garlic powder – Minced garlic would work well here, too.
Butter – I like to use salted butter as it adds more flavor.
Italian seasoning – Sprinkle in and then taste at the end. You can always add more if needed.
Chicken broth – This helps the potatoes get nice and creamy. Vegetable broth works fine as well.
Salt and pepper – To taste.
How to make Potatoes in the Instant Pot
Gather the ingredients before getting started. That way, you don’t have to stop and run to the store when you’re in the middle of the recipe.
Step One: Clean and peel the potatoes. The best way to peel the potatoes is to use a vegetable peeler.
Step Two: Cut the peeled potatoes into small cubes.
Step Three: Put the chopped potatoes into the Instant Pot.
Step Four: Add ½ cup of chicken broth.
Step Five: Add in all the spices.
Step Six: Put on the lid and set to High pressure for 10 minutes.
Step Seven: Wait for a natural release for 10 minutes (do nothing) and then do a quick release by moving the venting knob into the venting position.
Step Eight: Add 4 tablespoons of butter to the Instant Pot.
Step Nine: Mash the cooked potatoes and all the added ingredients well.

Yes, you can use oil in place of butter. Just drizzle in the same amount of butter instead of oil and it will still have a great flavor and taste.
If you want to make the potatoes thicker, you can add in a tad bit of flour or cornstarch and mix.
If the potatoes are lumpy, you just need to mash them more! When you’re using your potato masher, make sure that you’re taking your time and mashing out all the chunks.

Clean, peel, and cube the potatoes. Add them to the Instant Pot.
Add the chicken broth, Italian seasoning, garlic powder, salt and pepper. Stir the ingredients well.
Place on the lid and cook for 10 minutes at high pressure.
Once the cooking time is complete, wait 10 more minutes for a natural pressure release.
After 10 minutes have passed, do a quick pressure release.
