Chicken Thighs – I have used boneless, skinless chicken thighs in my recipe because they turn out so moist and delicious but you can also go with the chicken breasts. Cut off the excess fat first, wash it, pat dry, and use.
Lemon Juice – It adds a bit tarty yet so wonderful flavor to your chicken inside and out and makes your chicken extra soft and tender in texture. You can also use lemon zest here if you want to.
Balsamic Vinegar – It is the king of all the ingredients in this recipe. Balsamic vinegar adds in a bit smoky, a different but mindblowing sweet and sour flavor, and a mellow tartness in this dish balancing the rich flavors of the chicken. This is what makes this dish very different from others.
Chicken Broth – You can use any chicken broth whether homemade or store-bought. But make sure your broth is fresh and good because it plays a very important role in flavor and taste. You can also use vegetable broth if you don’t have any or watch my Chicken broth recipe.
Veggies – I have used my favorite combination of veggies here like carrots, baby potatoes, garlic, and asparagus but you can also add or less depending on your choice. some recommendations to use here are onion, corns, bell peppers, or any other you like.
Xanthan Gum – If you’re not familiar with it then it’s an agent used for thickening liquids, especially those that are in small amounts. There were so many leftover spices at the bottom of the Instant Pot and I didn’t want to waste any of it. Xanthan gum wipes up every bit of it while converting them into a thick flavorful sauce that you’re gonna die for 🙂
How to Make Balsamic Chicken
Gather all the necessary ingredients first.
Take an Instant Pot and pour 2 tablespoons of olive oil into it. Then add 3 chicken thighs to it.
Press the ‘saute’ mode and set the timer for 5 minutes. Let it cook and flip it after a while to cook both sides.
Dish out the chicken and set it aside.
Now add 3 tablespoons of ghee to an Instant Pot and pour ½ cup of lemon juice into it.
Pour 2 tablespoons of balsamic vinegar into the pot.
Add 3 finely chopped garlic cloves to the liquid.
Stir them a bit and then pour ½ cups of chicken broth into it.
Place the sauteed chicken in an Instant Pot then add 1 teaspoon of Italian seasoning to it. You can explore Italian sausage and paste as well if you like Italian dishes.
Add 1 large carrot, cut in medium pieces, to it.
Add ½ lb of medium-sized baby potatoes to it.
Add salt to it as per taste.
Add pepper to it as per taste.
Lock the lid and select ‘high pressure’ mode. Set the timer for 5 minutes.
After 5 minutes, give it a natural release so the chicken gets some m0re time to get tender and juicy. Then dish them out.
Now, take ½ bunch of asparagus and add it to an Instant Pot.
Add ½ teaspoon of garlic powder to it.
Select ‘saute’ mode and set the timer for 5 minutes.
Then dish it out and add ½ teaspoon of Xanthan Gum to an instant pot.
Keep stirring with the help of a wooden spoon until it turns into a thick and nice sauce.
The delicious and juicy chicken is ready to serve! pour the sauce over it, serve it with sauteed asparagus, and enjoy!
What to Serve with Balsamic Chicken
It’s an overall dish that doesn’t need any other side dish to make it fancier but I already have made it with some sauteed asparagus. If you want to skip this side dish and want to act more impressive, then I can suggest some of the very easy side dishes that make Balsamic Chicken more flawless.

What more variations can I do in this recipe?
You can do so many variations in this recipe as it is very flexible and goes perfect with every change. Like you can add your favorite herbs to it like thyme, rosemary leaves, etc. I sometimes love adding honey to it as it gives this dish more strong sweet flavor which my family love. You can also use olive oil only instead of ghee to give a more rich flavor to the dish. Add and fewer spices and veggies as your family’s choice.
Can I store Balsamic Chicken? And for how long?
Yes, You can store the leftovers of it for 2-3 days in the refrigerator, packed in an airtight container, or properly covered in aluminum foil. You can also freeze it for 1-2 months by keeping it in a freezer-friendly bag and don’t forget to label the date on it. It would be helpful for you to know whether it’s good to eat or not.
Is it good to marinate the chicken first then cook?
Yes, Why not! But it would be good to marinate chicken for a few hours only instead of overnight to save it from breaking into pieces while cooking. The best way to marinate it is with lemon juice, salt, pepper, Italian seasoning, and some honey.

Take an instant pot and add olive oil and chicken thighs to it.
Saute it for 5 minutes while keeping flipping the sides of the chicken thighs to cook them equally on both sides. Dish it out and set it aside.
Then add ghee, lemon juice, balsamic vinegar, chopped garlic into an instant pot, and stir a bit.
